Pears poached in red wine and chocolate are a decidedly rich and exquisite dessert. A tasty end to a meal, but they can become a real snack if accompanied by a good tea. Since preparing them will require a bit of your time, I recommend cooking them the day before. Not only will they be tastier, but also just the right firmness.

Ingredients
- 4 medium-sized pears
- 2 cups red wine
- 2 cloves
- 1 teaspoon ground cinnamon
- 3.5 oz dark chocolate
- 1/3 cup brown sugar
- 1/2 cup water
Preparation
Preheat the oven to the highest temperature.
In the meantime, wash the pears and place them in a tall-sided baking dish: a soufflé dish.
Add the wine, cloves, and cinnamon.
Bake, and after 5 minutes, lower the temperature to 320°F.
Continue cooking for at least 45 minutes, and in any case, until inserting a toothpick into the pear, you feel the flesh softened.
Turn off the oven and let it cool, keeping the oven door slightly open.
Now, it’s time to prepare the glaze:
in a small saucepan, pour the sugar, water, and when it starts to form the first boiling bubbles, add the chopped chocolate.
Lower the heat and with the help of a wooden spoon, continue stirring until everything is melted.
You should obtain a smooth and fluid consistency.
Before using it, let it cool for at least fifteen minutes.
At this point, place your pears on a tray and pour the glaze over them.
Put them in the fridge for the time necessary to solidify the chocolate.
Serve them at room temperature.
