The Pork Sausages with Sautéed Bell Peppers are a truly delicious dish, and decidedly easy and quick to prepare. Not only do children love them, but adults also enjoy them very much. I always add raisins and pine nuts because they pair very well with the bell peppers, but if you want, you can easily leave them out, as the goodness of this recipe won’t change. Usually, sausages are not a testament to healthy eating, but not all of them are that bad. There are many available on the market, you just need to pay a little attention to find the right ones, as I did in this case. This doesn’t mean that in any case, it’s good to avoid eating them often, but once in a while, you can make an exception to the rule.

Ingredients
- 4 large pork sausages
- 4 medium bell peppers
- to taste salt
- 1 tbsp raisins
- 1 tsp pine nuts
- 2 tbsp extra virgin olive oil

Preparation
Wash the bell peppers, dry them, cut them in half, remove the white parts with the seeds trying not to waste too much, and cut them into 3/4 inch strips.
Place them in a non-stick skillet along with two tablespoons of extra virgin olive oil, and cut the sausages into 3/4 inch thick slices.
Initially, cook them over low heat to soften them and then raise the heat to brown them well. In the meantime, adjust the salt and add the raisins with the pine nuts.
5 minutes before the end of cooking, when the bell peppers are almost cooked, add the sausages to the skillet and let them brown.

Tips and Storage
You can store the sausages and peppers in the refrigerator for a few days, but always in a glass or ceramic container.
If you want, you can also freeze them to keep them longer if you have leftovers. Place them in the freezer in single servings, very practical, and defrost them in the refrigerator or microwave.
