Puff Pastries with Pistachio Cream are not only delicious but also very easy and quick to prepare. With only three ingredients: puff pastry, pistachio cream, and plain yogurt, you can make a delightful treat, perfect for breakfast, a snack, or even as a dessert. I usually make the Pistachio Cream myself, but if you don’t have time, there are some great ready-made ones. I must say that always having a stash of puff pastry at home is convenient, even for last-minute sweet or savory preparations. If I notice it’s about to expire and I haven’t used it yet, I freeze it, so I can keep it for about two more months.

- 1 package rectangular puff pastry
- 1.75 oz pistachio cream
- to taste plain yogurt
- 1 egg yolk
- 0.35 oz crushed pistachios
- to taste powdered sugar for decoration

How to Prepare Puff Pastries with Pistachio Cream
Pour the pistachio cream into a small bowl, add the yogurt one tablespoon at a time to adjust the thickness, and mix well.
I didn’t specify the exact amount of yogurt because it may vary depending on the type you choose.
Even among Greek yogurts and others, the consistency varies, so add it little by little to reach the desired creaminess.
Remove the packaging from the puff pastry, fold it in half to see two separate parts, and spread the cream you just prepared on the first one.
Cover with the other part of the pastry, seal the free edges well with your hands, and with a knife, cut it in half, then continue until you have 8 vertical strips.
Turn it over and make another central cut to finally have 16 pastries.
Brush the entire surface with beaten egg yolk and sprinkle with crushed pistachios.
Bake in a preheated oven at 350°F, and let them cook for about 15 minutes, or until they are golden.
Serve your Puff Pastries with Pistachio Cream once they’ve cooled and are dusted with powdered sugar.
Tips, Variations, and Storage
The pastries can be stored for 1 or 2 days in the refrigerator, but inside a glass or ceramic container.
You can reheat them slightly in the microwave or at room temperature.
If you’re vegan, you can easily replace the yogurt or pastry with entirely plant-based products, as the result will still be excellent, already tried and tested.
