Puff Pastry Tree with Radicchio

The Puff Pastry Tree with Radicchio, is loved by my nieces and nephews, so when the Christmas holidays arrive, Matilde and I get to work. Nothing could be simpler and faster, especially since the pastry is store-bought. I adore this combination because the cheese and raisins contrast the bitterness of the radicchio, but any other vegetable is fine.

If you want to make a sweet tree, the process is the same, but the filling will obviously change, maybe with fruits like apples.

Ingredients

  • 1 package rectangular puff pastry
  • 8.8 oz red radicchio
  • 1 tbsp raisins
  • 2 tsp pine nuts
  • to taste salt
  • 1 tbsp extra virgin olive oil
  • 6 slices melting cheese, not sandwich cheese
  • 1 egg yolk
  • Half small onion, preferably red

  • 1 parchment paper
  • 1 Brush kitchen
  • 1 Pan non-stick

How to Prepare the Puff Pastry Tree with Radicchio

To prepare the Puff Pastry Tree with Radicchio, start immediately with the radicchio.

For this operation, refer directly to a recipe I have already published: Sautéed Radicchio with Raisins and Pine Nuts

Remember, however, that for this recipe, the raisins should not be soaked in wine, as the radicchio filling for the puff pastry should be rather dry.

Once cooked, turn off the heat and let it cool directly in the pan before using it to fill the puff pastry.

Set all the ingredients on your work surface, including the egg yolk, so everything is within reach while creating this delicious recipe.

Roll out the pastry and cover it with the slices of melting cheese (I only used 6 because they were thick, but if you only find thin ones, add a few more).

Pour the sautéed radicchio on top, roll it up from the long side of the pastry, wrap it in its own paper, and let it rest in the fridge for at least 10 minutes.

Now cut it into rounds: you should be able to get one larger wheel for the trunk and 9 smaller ones for the branches.

Arrange them into a tree shape on a baking tray lined with parchment paper, and brush the entire tree with the egg yolk.

Bake in a preheated oven at 350°F and let it cook for about 20 minutes, or until it is nicely golden.

You can serve your Puff Pastry Tree with Radicchio immediately to enjoy it gooey, or at room temperature for a standing appetizer.



Tips and Variations

If you want to prepare in advance, you can also freeze the rounds well ahead of time.

In this way, you only need to assemble them on the tray, brush them with the egg, and bake them… it will certainly take more time to bake, but the result will be just as excellent.

Otherwise, bake the tree the day before and then heat it in the microwave.

Don’t like radicchio? No problem, fill it as you see fit, it will surely be just as good.
