How to prepare the Pumpkin Gratin Rice Cake
To prepare the Pumpkin Gratin Rice Cake, organize your workspace with all the ingredients, already measured, so you have everything at hand.
Remove the seeds from the pumpkin, and with the help of a peeler, peel it, because otherwise, using a knife, there is a risk that it might slip.
Cut it into pieces, and brown it with the extra virgin olive oil in a large pot, along with two crushed garlic cloves.
Add a glass of water, lower the heat, season with salt and pepper, and continue cooking covered, as this will soften it more easily.
In the meantime, boil the rice, but drain it al dente, because it will need to finish cooking in the oven.
In a large bowl, pour the rice, the pumpkin pulp sautéed in the pan, as well as the grated Parmesan cheese, salt, and pepper, so it can be well flavored.
Turn on the oven and set it to a temperature of 356°F.
Grease and sprinkle the tart pan with breadcrumbs, and pour all the mixture into it, trying to level it as much as possible, so that the cooking is uniform.
Sprinkle a little Parmesan on the surface, as well as some breadcrumbs, a drizzle of oil, and put it in the oven.
Let it cook for about 30 minutes, or until the top is well browned.
