Quick Chilled Melon Cream

Ingredients

  • 1.8 lbs melon
  • 1/4 cup brown sugar
  • 3 egg yolks
  • 1/2 cup cornstarch
  • 2/3 cup plant-based milk
  • 2 tablespoons rum

Preparation

Open the melon, remove the seeds, the peel, and slice it, leaving one for decoration. Cut the rest into pieces, place it in a food processor, and blend.

In a saucepan, put the eggs, sugar, and blend the two ingredients with a hand whisk.

Add the blended melon pulp, the rum only if you prefer (during cooking, the alcohol evaporates, leaving only the liquor’s aroma), the plant-based milk, and finally, add the cornstarch as a thickener.

Mix well, put on medium-low heat, and stir continuously until the mixture reaches the right consistency. At this point, pour it into glasses and let it cool. Cover with a lid or plastic wrap in contact with the cream and refrigerate for at least two hours.

Serve our Quick Chilled Melon Cream, not before decorating it with melon cubes and fresh mint leaves.

Tips and Storage

The melon cream keeps perfectly in the refrigerator for a few days, obviously keeping it closed in a glass or ceramic container.

If you don’t like rum, choose a liquor that can resemble it, or even nothing. I think it fits really well.

You can prepare the Quick Chilled Melon Cream the day before, so it sets just right.

This type of dessert can be made with any kind of fruit, so if you don’t like melon, create the cream with the fruit you prefer.
