Quick Chilled Melon Cream

A dessert that, due to these characteristics, is light, fresh, yet equally tasty. However, if you prefer a richer taste, you can also use cow’s milk without any problems. It is also great for filling crepes or any other type of dessert, making it a must-have in our fridge during the hottest days of the year. If you don’t like melon, you can use any fruit you want, following the same procedure.

Ingredients

  • 28 oz melon
  • 1/4 cup brown sugar
  • 3 egg yolks
  • 1/2 cup cornstarch
  • 2/3 cup plant-based milk
  • 2 tablespoons rum

Preparation

Cut the melon open, remove the seeds and peel, slice it, and set one slice aside for decoration. Chop the rest into pieces, put it in a food processor, and blend.

In a saucepan, combine the eggs and sugar and blend the two ingredients with a hand whisk.

Add the blended melon pulp, the rum if you wish (the alcohol evaporates during cooking, leaving only the aroma of the liquor), the plant-based milk, and finally the cornstarch to thicken.

Mix well, place on medium-low heat, and stir continuously until the mixture reaches the right consistency. Pour into glasses and allow to cool. Cover with a lid or plastic wrap in contact with the cream and refrigerate for at least two hours.

Serve the Quick Chilled Melon Cream, decorating with melon cubes and fresh mint leaves before serving.

Tips and Storage

The melon cream keeps well in the refrigerator for several days, provided it is stored in a closed glass or ceramic container.

If you don’t like rum, choose a similar liqueur, or even none at all. In my opinion, it fits very well.

You can prepare the Quick Chilled Melon Cream the day before to let it set properly.

This type of dessert can be made with any kind of fruit, so if you don’t like melon, create the cream with the fruit you prefer.
