Rabbit and Mustard Burger

The Rabbit and Mustard Burger is a recipe I created a few days ago to consume this type of meat, which I personally do not like very much because, in my opinion, it has little flavor. Rich in noble proteins, besides its high digestibility, it is low in sodium, fats, and rich in vitamins and minerals such as potassium, magnesium, and phosphorus. Therefore, we should try to bring it to our tables more often, trying to make it as tasty as possible: this recipe certainly is.

Ingredients

  • 25 oz boneless and minced rabbit meat
  • 5 oz ground pancetta
  • 1 medium onion
  • 2 tbsp mustard
  • 1 tbsp Marjoram
  • to taste salt and pepper

Preparation

  • Have the rabbit meat deboned and minced, along with the pancetta.
    Place it in a bowl, and gradually add the finely chopped onion, mustard, marjoram, salt, and pepper.
    Mix all the ingredients well, and with the help of a pastry ring, shape your burger.
    Heat a non-stick pan, place the meat on it, and let it brown well for about 5/7 minutes over medium-high heat.
    Try to continuously turn the medallions.
    When they are well browned, slightly lower the heat, cover with a lid, and let cook for another 5/7 minutes.
    Turn off, serve very hot, and lay them on crispy vegetables.

Notes

Tip: for those who want to serve the Rabbit and Mustard Burger as in the photo, it is canasta lettuce, cut into strips and seasoned with oil, salt, balsamic vinegar, and goji berries.
