Radicchio, pear, parmesan, and honey, a delicious side dish to bring to the table for the Christmas holidays and beyond. I like it so much that I prepare it this way throughout its seasonal period. Easy, quick, beautiful, ideal even for those with little cooking experience who want to make a good impression with minimal effort. Additionally, it pairs well with any type of dish and can also be served as an appetizer if reduced to small portions. However, I recommend not preparing it too far in advance, as the vegetables wilt easily. Prepare each ingredient, keep in the fridge, and assemble at the last moment.

- Cost: Affordable
- Preparation time: 15 Minutes
- Portions: 4 people
- Cooking methods: No-cook
- Cuisine: Italian
- Seasonality: Autumn, Winter
Ingredients
- 0.88 lbs red radicchio
- 1 small pear
- 8 walnut halves
- 1.4 oz parmesan
- 1 tbsp honey
- 1 lemon juice
- 2 tbsps extra virgin olive oil
- to taste salt and pepper
Tools
- 1 Bowl
- 1 Knife
- 1 Cutting board
Preparation
Divide the radicchio in half, wash it under running water without removing the leaves, and let it drain in a colander. Once the radicchio is well dried, slice it into strips and put it in a bowl.
Wash the pear thoroughly, dry it, cut it in half, and remove the core. With a sharp knife, cut it into thin slices without removing the skin. Put the slices in a bowl and sprinkle with lemon juice to prevent browning.
Shave the parmesan into flakes and coarsely chop the walnuts. At this point, you can dress it with extra virgin olive oil, salt, and freshly ground pepper if you like.

Add the walnuts, parmesan, pears with all their juice, honey, and mix all the ingredients well.
Serve our Radicchio, Pear, Parmesan, and Honey by placing it on a serving plate, decorating with a few slices of pear, walnut, and serve immediately.
Tips
The radicchio salad can be stored in the fridge for at least a day, but it will lose its texture and the pear will turn darker.
For this reason, I recommend assembling it at the last moment by preparing each ingredient separately and adding the pear only at the end.
If someone is allergic to walnuts, they can always replace them with another type of nuts: pine nuts work great.
