Radicchio Salad with Raisins and Pine Nuts is really quick to prepare. Simply tasty and unusual, it always pleases everyone. Yesterday I served it to my guests for lunch alongside a fish dish… fresh and light, it’s still delicious with meat or cheese too… try it right away, it won’t disappoint. An excellent antioxidant, it is a food low in calories but rich in minerals and vitamins.
As usual, I always recommend using products from organic farming.

Ingredients
- 14 oz Red radicchio
- 2 tbsp Raisins
- 1 tbsp Pine nuts
- to taste Balsamic vinegar
- to taste Extra virgin olive oil
- to taste Salt and pepper
Preparation
First, cut the red radicchio in half.
Slice it into thin strips and soak in plenty of cold water.
Change the water at least two or three times, then let it dry.
Use a salad spinner or a clean cloth.
Place the radicchio in a large bowl and add the raisins and pine nuts.
Mix, then add the extra virgin olive oil and balsamic vinegar.
Season with salt and pepper, and mix everything well.
Serve your Radicchio Salad with Raisins and Pine Nuts immediately after seasoning.
Do not season it too early, otherwise, it will lose its crunchiness.

Tip: If you don’t like radicchio in salad because it’s too bitter… try it sautéed. However, add a sliced onion to the recipe I just suggested.
If you don’t like raisins and pine nuts, try red fruits and walnuts… they also go well with this type of salad.
