Radicchio with almonds in air fryer, a delicious, simple, and quick side dish to prepare. With this cooking method, we avoid grilling vegetables on the stove and certainly save time and money. This way, we can grill all the vegetables we desire, just increase or decrease the cooking times based on the size. It is not a real fryer even if it makes the food crispy. Actually, it is a small convection oven, which due to its small size prevents heat loss, rather it concentrates it on the food. I recommend, however, buying at least a 5.5l one, because usually the internal baskets are much smaller than the machine.

Ingredients
- 1 lb radicchio
- 1 tbsp extra virgin olive oil
- to taste salt and pepper
- 2 tbsps balsamic vinegar
- 1 tbsp plenty of sliced almonds

Preparation
Clean the radicchio by removing only the final part, without discarding the outer leaves. Cut it in half, wash it thoroughly by opening it like a flower, and dry it with a cloth or paper towel.
Grease the bottom of a silicone dish (parchment paper is fine too) and use a brush to evenly distribute the extra virgin olive oil. Place the radicchio wedges inside and drizzle a little more EVO oil on top to spread with a brush. With an oil spray, it will be much easier and we’ll have less waste. Finally, place the dish in the air fryer’s basket, but not before preheating it for at least two minutes at a temperature of 340°F.
Close and cook for 7 minutes, then open and turn the radicchio. Continue cooking for another 7 minutes, then arrange the vegetable on a serving plate.
Now we just need to season the grilled radicchio with salt, pepper, balsamic vinegar (or a tablespoon of balsamic vinegar glaze), and sliced almonds.
Serve our Radicchio with Almonds in Air Fryer, hot, warm, or cold, as you prefer because it will be delicious any way.
Tips
We can store radicchio in the fridge for two or three days, but inside an airtight container.
It can also be frozen for a few months, but I recommend doing so without seasoning.
Thaw it in the fridge slowly and never at room temperature to avoid unpleasant food poisoning.
