Robiola Crostini with Dukkah

Robiola Crostini with Dukkah are really special, especially when served as an appetizer. Dukkah is a blend of spices and dried fruits, which I first had the pleasure of tasting in Egypt. They were presented to me in a small bowl, with some Arabic bread and olive oil. In this recipe, I offer you a simple Dukkah made with few ingredients, paired with creamy cheese…what delicious crostini!!!!

Ingredients

  • 1 package of robiola cheese
  • as needed slices of whole wheat bread
  • 1.5 oz hazelnuts
  • 2 tbsp sesame seeds
  • 2 tbsp coriander seeds
  • 1 tbsp cumin seeds
  • as needed extra virgin olive oil
  • as needed salt and pepper

Preparation

  • Toast the seeds in a non-stick pan, preferably one variety at a time.
    Let them cool slightly, then crush them in a mortar to create a paste that is not pulverized.
    Season with salt and pepper to taste: I like it to have a robust flavor.
    Set them aside, and in the meantime, toast the bread slices, but do not over-dry them.
    In a bowl, mix the robiola cheese with the extra virgin olive oil until creamy.
    Again, season with salt and pepper.
    Spread some cheese on each crostini and sprinkle with the seed mixture.
    Plate the Robiola Crostini with Dukkah, drizzle with more olive oil, and serve immediately.
