  • Cuisine: Italian
  • Seasonality: Fall, Winter, and Spring

Ingredients

  • 2.2 lbs spinach
  • 1 clove garlic
  • 2 tbsps extra virgin olive oil
  • 1 heaping tbsp pine nuts
  • to taste salt

Tools

  • 1 Pan non-stick

Preparation

Clean the spinach, soak them for a few minutes to soften any soil residue. Rinse them under running water and drain them well.

In a large pan, heat the oil with the pine nuts and sauté them with the garlic until they reach your desired level of golden brown.

Add the spinach a little at a time, stirring until they soften and reduce in volume, keeping a medium-high flame. Salt and let cook for about 10 minutes.

Once cooked and flavored, place them on a serving plate and drizzle with the cooking juices.

Serve the Sautéed Spinach with Garlic and Pine Nuts immediately, hot or at room temperature. To make them even more flavorful, you can sprinkle with grated parmesan.

Tips, Variations, and Storage

The sautéed spinach can be stored in the refrigerator for 1-2 days in an airtight container.

I do not recommend freezing them as they tend to become too mushy. However, if necessary, they can be used to stuff roasts or savory pies.

For a richer version, you can also add crispy pancetta or bacon cubes.

Raisins also pair nicely.
