Ingredients

  • 2 1/2 cups type 2 flour
  • 3 1/2 oz grated Pecorino Romano
  • 3 1/2 oz almonds
  • 3 eggs
  • 1 packet instant yeast for savory preparations

Preparation

Start preparing our recipe by coarsely chopping the peeled almonds and finely chopping sage and rosemary with a suitable knife. Meanwhile, in a small bowl, beat the eggs with the salt.

Pour the type 2 flour into a large bowl, along with the instant yeast, chopped herbs, grated Pecorino Romano, and beaten eggs.

Mix all the ingredients well and finally incorporate the almonds. Turn the mixture onto the work surface and knead with your hands for a few minutes. After lining the baking sheet with parchment paper, we place our loaf (better two) on top and flatten it. Bake in a preheated oven at 350°F and cook for 30 minutes.

After this time, remove it from the oven, let it rest for about ten minutes, and then slice it (the thickness of the slices will depend on the need of the moment). In this case, I divided each slice in two because I hadn’t flattened the loaf well. At this point, put everything back on the baking sheet and continue baking for another 15-20 minutes, depending on how much browning you prefer. Finally, once cooked, place them on a wire rack to cool.

Now that our Savory Cantucci with Pecorino and Almonds are ready, let’s resist eating them immediately (really hard to resist) and store them in a glass jar or a tin container.
