Today we ate Skillet Dumplings with Cheese and Nettle at a mountain refuge on the Croda Rossa. We started from Val fiscalina, 4460 feet, and reached 6562 feet. It’s a dish that can be considered a one-pot meal because it’s also served with a portion of cabbage salad. A very simple recipe to make, and it allows us to reuse stale bread, so I’d say it’s waste-free… try it now because it’s delicious even if the temperature has risen.

Ingredients
- 10.5 oz stale bread
- 1¼ cups milk
- 10.5 oz boiled nettles
- 3.5 oz Asiago cheese
- 1 onion
- 2 cloves garlic
- 4 eggs
- 3 tbsp butter
- 1 pinch nutmeg
- 1.5 oz grated Parmesan
- 2 tbsp flour
- to taste extra virgin olive oil

Preparation
First, organize your workspace with all the ingredients, already measured, so you have everything at hand.
Put the stale bread in a bowl and cover it with milk to soften it completely.
Meanwhile, blanch the nettles in boiling water, drain them, and once cooled, squeeze out as much water as possible.
Also, squeeze the soaked bread well and place it in a large bowl with the finely chopped nettles.
Add the chopped onion and garlic, preferably processed in a food processor, so they blend well with the mixture.
Mix in the eggs, nutmeg, Asiago cheese cubes, grated Parmesan, and finally the flour.
Salt and mix well, forming balls with your hands, and then flatten them to form patties.
Heat a non-stick skillet over medium-high heat, add the extra virgin olive oil, and once hot, cook the dumplings.
Continuously flip them for even browning, and once done, turn off the heat.
Serve your Skillet Dumplings with Cheese and Nettle hot, and if you like, accompany them with Marinated Cabbage, just like in the photo.
Tip: Once you start making them, prepare extra so you can freeze them and use them whenever convenient.
