Tips and Variations
Smoked Salmon and Orange Salad cannot be prepared in advance because oranges tend to become bitter, but it’s so quick to make that it’s not even worth it.
The zest of untreated oranges should never be thrown away because it can be reused to flavor other foods.
It also makes a good marmalade, and chocolate-covered candied orange peels are not bad either.
You can also flavor salt and extra virgin olive oil with it… in short, maybe freeze them if you don’t have a significant amount, but don’t throw them away.
