Spaghetti with Asparagus Sauce

Spaghetti with Asparagus Sauce, is the flagship dish, this spring period, of my sister Barbara: it’s a recipe she prepares divinely, and despite its simplicity, it always satisfies everyone. Try it to believe it!!!! In this recipe, we find a perfect combination: asparagus, tomato, and extra virgin olive oil, ideal for our health.

Spaghetti with Asparagus Sauce

Ingredients

  • 14 oz asparagus, cleaned
  • 14 oz spaghetti
  • 28 oz Tomato pulp
  • 1 medium onion
  • to taste Extra virgin olive oil
  • to taste salt and pepper
  • to taste grated Parmesan or Pecorino cheese

Preparation

  • First of all, organize your workspace with all the ingredients, already measured.

    Clean, wash the asparagus, dry them, and cut them into pieces.

    Sauté them in a non-stick pan, along with the onion and extra virgin olive oil.

    Add salt, pepper, and the tomato pulp, along with as much water as the sauce jar holds.

    Bring to a boil, and after a few minutes, lower the heat and let it cook.

    Once the sauce has reduced sufficiently, taste and adjust the salt and pepper.

    Turn off the heat and bring a pot of water to a boil for the pasta.

    Drain it, and toss it into the pan containing the sauce.

    Mix over high heat for a few seconds.

    Serve your Spaghetti with Asparagus Sauce hot, sprinkling with freshly grated Pecorino or Parmesan cheese.

Notes

Tip: try to consume asparagus often during this period, as they are great allies for our health.

They contain exceptional beneficial properties, but their season is so short that we must take advantage of it as much as possible.
