Stewed Cod with Raisins and Pine Nuts

The Stewed Cod with Raisins and Pine Nuts is a recipe my grandmother often prepared during the winter season. Accompanied by toasted bread slices, we could consider it a complete meal. Do you know the difference between Cod and Stockfish? Cod is a type of fish preserved with salt, while stockfish is preserved through smoking. However, both are traditional methods of processing and preservation.

Ingredients

  • 2.2 lbs Desalted Cod
  • 28 oz Tomato Pulp
  • 2 cloves Garlic
  • 12 small white onions
  • 4 Large Potatoes
  • 1 tbsp Raisins
  • 1 tbsp Pine Nuts
  • 1 tbsp Oregano
  • to taste Extra Virgin Olive Oil

Preparation

  • Chop the garlic cloves into small pieces, peel the potatoes, and dice them. Sauté everything with 4 to 5 tablespoons of extra virgin olive oil. After about ten minutes, add the tomato pulp and the small onions. Mix well, and if necessary, pour in a cup of boiling water. Let it cook for another ten minutes, covering the pan with a lid. At this point, also add the cod fillets and oregano. Keep the lid on the casserole, lower the heat, and let it cook for another twenty minutes. Turn it off and adjust with extra virgin olive oil. Salt will never be necessary since, even when desalted, cod retains a certain saltiness, which will flavor the rest of the ingredients. Portion the fish, accompanying it with some slices of toasted bread. Serve very hot.
