Ingredients

  • 8 slices whole grain bread
  • 0.88 lbs pumpkin with skin without seeds
  • 0.44 lbs fresh sausage
  • 3.5 oz gorgonzola
  • 8 walnuts
  • 2 tbsps extra virgin olive oil

Preparation

Wash the pumpkin well because we won’t remove the skin, just the seeds. Dry it, slice it thinly, and place it in a baking dish previously lined with parchment paper. Season with extra virgin olive oil, salt, oregano, and bake in a preheated oven at 392°F. Let it cook for about 20-30 minutes, until it is soft and golden.

Meanwhile, remove the skin from the sausages, place them directly in the non-stick pan, and crumble them well with a fork. Sauté them for a few minutes on high heat without adding more fats. At this point, slice the bread and toast it for a few minutes in the oven or in a pan.

Now that all the ingredients are ready, we can assemble our toasts. Place a first layer of pumpkin on the slices of bread, add the sausage, then the gorgonzola, and finally the walnut kernels.
