The oat cake is a cake I prepare very often. I like it because it is fat-free, except for the fats from the nuts or chocolate, and it contains no eggs. It can be made sweet or savory and is an excellent leftover-cleaning recipe, or rather, pantry-clearing. In fact, it is prepared by mixing 100 g of cereal flakes, 250 grams of nuts and chocolate mixed in a highly variable manner, and little else. Therefore, it is perfect for using up small leftovers that are useless on their own but become precious in this mix. I usually use oat flakes and almond rice milk for this cake. It will be very simple to prepare it gluten-free by replacing the small amount of flour in the batter with cornstarch or rice flour.
In the mixture, I always add an apple, which the original recipe didn’t include. I think it makes it softer and even more delicious. The result is a light cake, with little sugar, no fats, but lots of flavor. Super energetic, thanks to the presence of dark chocolate and nuts.

What is needed to prepare the oat cake with hazelnuts and chocolate
To prepare this cake I used a rice milk with cocoa and hazelnuts, but any other milk will do just fine, even cow’s milk if it doesn’t bother you, or plant-based milk.
- 3 1/2 oz oat flakes (organic)
- 1 1/4 cup rice milk (with cocoa and hazelnuts)
- 1/4 cup brown sugar (1/3 cup if using unsweetened milk)
- 3 1/2 oz flour (wheat, or any substitute)
- 1 tsp ground cinnamon
- 2 tsps baking powder
- 3 1/2 oz hazelnuts
- 3 1/2 oz 70% dark chocolate
- 5 1/4 oz dried fruit (or nuts as desired: walnuts, almonds, raisins, and more)
- 1 apple (chopped)
I would like to specify that this batter lends itself to many variations. We can replace the oat flakes with corn flakes, bran sticks, or puffed rice, mix the nuts as desired and add or omit the chocolate. However, the total should always be 9 oz.
Further, wheat flour can be replaced with gluten-free flour, cornstarch, or rice flour in slightly smaller amounts.
What tools are needed for the oat cake?
This cake, strange but true coming from me, is mixed in a bowl with a spoon.
I always bake it in a loaf pan.

How to prepare the oat cake – Light cake with chocolate and hazelnuts
We work with a large bowl and a spoon.
First, slightly warm the milk and then soak the oat flakes in the milk. Forget them for at least ten minutes, meanwhile peel the apple and chop it into pieces, as well as the chocolate. Weigh the nuts; in my mix, this time, I added leftover broken marrons glacés (excellent choice!). Then, gradually add to the base of milk and oat flakes, the sugar, cinnamon, chopped nuts, and chocolate. Mix carefully and add flour and baking powder. Finally, add the chopped apple.
The batter for our oat cake is ready.Line a 12-inch loaf pan (or slightly smaller) with parchment paper and preheat the oven to 340°F. Pour the batter and stir gently so that the ingredients are well distributed, and bake.
The oat cake bakes for a long time, not less than forty minutes but no more than fifty.Once cold, remove the cake from the pan and sprinkle with powdered sugar.
It may be difficult to cut a precise slice, but this cake is really good, I have prepared it many times for my children who call it “the cake with nothing”. It’s a great snack companion.
