I prepared a delicious pink beetroot sandwich: it looks like a flowered meadow! The one I present today is an assembly of great satisfaction for the eyes and the palate, but very simple to make. In fact, I just spread the milk bread for sandwiches with the pink beetroot butter. On top, I carefully placed the boiled and cooled agretti under running water, and finally decorated with edible flowers (be careful where you pick them) and toasted hazelnuts to give a crunchy touch to my very soft edible meadow.
The pink beetroot sandwich with agretti and edible flowers is a great idea for Easter Monday picnics but will also be perfect for a Sunday brunch.
If we wanted to prepare a couch dinner in front of a good movie, we could pair the pink beetroot sandwich with two fried eggs or some slices of prosciutto or a good carpaccio with oil and lemon.

What you need to prepare the pink beetroot sandwich
For this preparation, I used agretti, which are perfect for aesthetics and taste. However, I am convinced that asparagus would be just as good.
To prepare the beetroot butter, read my recipe: it’s very simple.

- 1/4 cup butter (beetroot)
- 5.3 oz agretti (already cleaned and boiled)
- 0.9 oz toasted hazelnuts (slightly chopped)
- 5 edible flowers (of your choice)

How to prepare the pink beetroot sandwich
We generously spread the bread with the beetroot butter. We delicately place the well-drained and cold agretti on the butter. We complete with colorful and edible flowers. These all come from my terrace, except for the mimosa that grows in a dear friend’s garden. Finally, to have some crunch, we add some toasted hazelnuts.

This beautiful colored sandwich, which I prepared on March 8 in honor of women, a human category I proudly belong to, is nothing but a game. Sometimes my creativity is unleashed, and small gems come out that even surprise me and catch me by surprise. With this sandwich, it went just like that.
