What You Need for Turmeric Lady’s Kisses
These ingredients, apart from the turmeric in the dough, are traditionally used for lady’s kisses with almond and parmesan. Then, they are paired with the help of simple cream cheese.
- 3/4 cups almonds (ground into flour)
- 3/4 cups all-purpose flour
- 1/2 cup butter (good quality)
- 1 tbsp dry white wine (about, as needed to knead)
- 2 tbsp Parmigiano Reggiano DOP (grated)
- 1 pinch salt
- 1 tsp turmeric powder
- 1.8 oz ricotta (very fresh)
- 1 pinch black pepper
- 1 sprig rosemary (only a few needles finely chopped)
- 1 pinch salt

A seed grinder is very useful for grinding almonds into flour, and the food processor speeds up kneading this sort of cross between shortcrust pastry and brisé. My new stand mixer (Pina, for friends) has everything needed, but often my old reliable food processor is enough. Both are Kenwood, and I’ll leave the models of which I am very satisfied below.

How to Prepare Turmeric Lady’s Kisses with Black Pepper and Rosemary
With the help of appliances, we’ll be done quickly, and the only longer task will be forming many equally sized round balls. With this portion, I made 60, which equates to 30 finished turmeric kisses. They will be enough for ten people.
Grind the almonds finely until powdered, add the wheat flour, cold butter cut into pieces, and salt. Then add a teaspoon of turmeric and knead as quickly as possible, using a sip of white wine to help. If you want to knead with a processor or stand mixer, you can find the procedure here; if kneading by hand, be careful not to overheat the butter. Proceed by forming many small balls with your hands – say the size of a walnut. Place them well-spaced on a baking sheet covered with parchment paper or a reusable silicone baking mat (an eco-friendly choice). Once done, the turmeric lady’s kisses must rest in the refrigerator for at least half an hour.
The turmeric lady’s kisses bake in a static oven for twenty minutes at 338°F (170°C). Preheat the oven and move the baking sheet from the refrigerator directly to the oven.
I recommend placing the baking sheet slightly below the middle so the kisses bake gently without browning. Then let them cool completely without moving them, or they will break. Finally, mix a grind of pepper, a pinch of salt, and a few needles of fresh rosemary, very finely chopped, into the ricotta. We will use this fragrant ricotta mixture to close the kisses by pairing them two by two.And enjoy your meal.

The quantities of this recipe can be easily multiplied, so it will be easy to prepare lady’s kisses for many people. We decide the size of our balls, larger or smaller, based on our tastes. As mentioned before, with this portion, we will get about 60 medium-sized balls, which will correspond to 30 lady’s kisses. If we plan to serve them as an appetizer with other small items, I think three per person should be considered. If we are thinking about a party buffet, perhaps for a children’s communion (without pepper, though), two per person will be enough.
