Ingredients
- 1.5 cups all-purpose flour
- 1.5 cups whole wheat flour
- 0.6 cups brown sugar
- 0.7 cups sunflower oil
- 2 eggs
- 1 egg yolk
- 1 1/2 tablespoon honey
- 2.5 teaspoons baking powder
- 1/3 cup chocolate chips
- 1 pinch salt
Steps
Start by pouring the cereals into the blender: turn it on for a few seconds, just enough to get a coarse grain. Transfer everything to a large bowl and add the whole wheat flour, a pinch of salt, and the brown sugar.
At this point, add the eggs, sunflower oil, and honey. Mix with a spoon and then continue with your hands until the ingredients start to come together.
When the dough is almost formed, also add the baking powder and work it again to distribute it evenly. Add the chocolate chips as well.
Assess the consistency:
– if the dough seems too soft or sticky, add a little flour;
– if it tends to crumble, soften it with a spoonful of honey.Line a baking sheet with parchment paper. Lightly grease your hands and take small portions of dough, forming balls the size of a walnut. Space them out and gently flatten to shape the cookie.
Bake at 356°F in static mode for 15-20 minutes, or until the cookies achieve a nice golden color.
Once baked, let them cool completely: they will become even crunchier!
Aly’s Tips
Aly’s Tips
🔸 For crunchier cookies
Let them bake a few extra minutes, ensuring they don’t darken too much. An even golden color will make them irresistible.
🔸 For softer cookies
Remove them from the oven as soon as they start to color and let them cool on the pan: they will continue to cook slightly on their own.
🔸 For an even more enveloping aroma?
Add a teaspoon of cinnamon or a pinch of vanilla to the dough.
🔸 Simple substitutions
You can use any type of honey, even wildflower or acacia. If you prefer, you can replace the chocolate chips with dark chocolate or chopped nuts.
🔸 To store them best
Keep them in a well-sealed glass jar: they stay perfect for up to a week.
🔸 Gift idea
Put them in a transparent bag with a ribbon, just like in the photo: you’ll make a great impression with a simple but lovingly made gift.
