Ingredients for Cheesy Spinach
- 2.2 lbs spinach, frozen
- 1 cup mozzarella for pizza
- 1 cup grated parmesan
- 3.5 tbsps butter
- 1 white onion
- 1 clove garlic (without the germ)
- 1 pinch nutmeg
- to taste salt

- to taste water (for cooking the spinach)

Preparation of Cheesy Spinach
First, we need to steam cook the frozen spinach in a pot. Once ready, we will squeeze them and let them cool a bit.
Then take a pan, put the butter and finely chopped onion inside. Turn on the heat and let it wilt. Meanwhile, the spinach will have cooled down, we can take them and with a knife, cut them into small pieces, and put them in the pan.
Heat for a few minutes, stirring well, then season with finely minced garlic, salt, pepper, and nutmeg. Stir.
While the spinach is flavoring, grate the mozzarella for pizza using the large holes of the grater, and then finely grate the parmesan. Once ready, pour them over the spinach.
Now on a low flame and stirring often, melt the added cheese. If needed, add a little water to make everything creamier. Once ready, serve immediately.

It is better to use mozzarella for pizza because it is drier and does not release water during cooking
