Fake fried donuts without yeast are practically Carnival castagnole, but instead of being ball-shaped, this time I made them into donuts. Sorry, but in Carnival, every trick is fair game! They differ from classic donuts, not only because of the yeast, which we don’t have in this case, but also in texture and flavor. Nonetheless, they are still delicious!

Ingredients for donuts without yeast
- 2 cups all-purpose flour
- 1/3 cup sugar (plus more for finishing)
- 2 1/2 tbsp milk
- 2 1/2 tbsp butter (softened)
- 1 egg
- 1 1/2 tsp baking powder
- 1 tbsp vanilla (paste with vanilla extract)
- 1 pinch salt
- 1 lemon (only grated zest)
- 1 qt peanut oil (for frying)

- 1 Rolling pin
- 1 Cookie cutter large

- 1 Slotted spoon

Preparation of donuts without yeast
We can prepare the dough using the Bimby, or by hand.
1 – In a bowl, place the all-purpose flour, sugar, and baking powder. Mix with a fork.
2 – Add the egg, milk, butter in pieces, salt, vanilla, and grated lemon zest.
3 – Knead everything by hand to obtain a soft and homogeneous dough.
WITH BIMBY: Place all ingredients into the bowl and knead at Spiga speed for 2 minutes
Remove the dough, place it on a floured work surface, and form a ball. It should be soft and homogeneous.
4 – Now roll out the dough with a rolling pin. Leave it about 1/5 inch thick. Then, with a large and a small cookie cutter, form the donuts.
5 – Take a high-sided frying pan, fill it with oil, and bring it to temperature. It should not exceed 340°F (check with a kitchen thermometer). Slide the donuts into the pan. Turn them frequently until they are cooked and golden brown.
6 – Drain them from the oil, place them on paper towels, and then roll them in sugar. Our donuts are ready!
Notes
If we don’t have cookie cutters, we can use a glass for the large shape, and a plastic bottle cap for the small one.
We can flavor the dough using grated orange zest or cinnamon powder.
I recommend eating them right away, while still warm, as they are delicious that way!
