Herb bread dumplings in broth are one of the many versions of the famous South Tyrolean dumplings. Simple to prepare, they are perfect for the first cold days. I used the aromatic herbs that my garden gives me every year, but you can use the ones you like best.

Ingredients for Herb Bread Dumplings
- 250 g (8.8 oz) stale bread (with thin crust)
- 125 ml (0.5 cup) milk
- 100 g (0.8 cup) all-purpose flour (add gradually)
- 1 egg
- 1 clove garlic
- 1 pinch black pepper
- 1 pinch salt
- to taste aromatic herbs
- 1 l (4 cups) vegetable broth

Preparation of Herb Bread Dumplings
Premise: I used dumpling bread sold in supermarkets in South Tyrol. It’s very convenient as it’s already cubed and ready to use.
1 – In a large bowl, place the cubed bread.
2 – Then add the milk, flour, and egg. Mix well and let it rest for 30 minutes.
3 – After the time has passed, season with salt, pepper, minced garlic, and aromatic herbs. Mix with your hands.
4 – FORM THE DUMPLINGS: Now, using moist hands, form the dumplings. The ‘balls’ should be at least 2 inches in diameter. Place the dumplings on a plate and let them rest for another 30 minutes.
COOKING AND SEASONING: Dumplings should be cooked for 15 minutes in vegetable broth. Once cooked, serve with grated Parmesan cheese.
NOTES
Once the dumplings are formed, they can be stored in the refrigerator for 2 days.
I used these finely chopped aromatic herbs: chives, parsley, thyme, marjoram, basil, rosemary, mint.
Alternatively, they can be frozen. (then they will be immersed in hot water frozen, and cooked a few minutes longer than the 15)
