MEDITERRANEAN FENNEL

I prepared the Mediterranean fennel in an air fryer. They are a light and tasty side dish, perfect to accompany meat or fish. We can also cook them in the oven, don’t worry, I’ll also write how to do it.

Ingredients for Mediterranean Fennel

  • 12 oz fennel
  • 9 oz cherry tomatoes
  • 5 oz yellow onion
  • 2 oz olives
  • 2 oz breadcrumbs
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 pinch garlic powder
  • 1 pinch dried oregano
  • to taste extra virgin olive oil

  • 1 Knife
  • 1 Cutting board
  • 1 Bowl
  • 1 Air fryer
  • 1 Air fryer parchment paper

Preparation of Mediterranean Fennel

First, wash well all the vegetables you need (fennel and cherry tomatoes) and peel the onion.

  • 1 – Cut the fennel and onions into slices, half a centimeter thick (about 1/5 inch), and place them in a large bowl.

    2 – Add the cherry tomatoes cut in half or quarters, and the olives.

    3 – Now season with breadcrumbs, salt, pepper, garlic, oregano, and oil. Preheat the air fryer to 338°F (170°C).

    4 – When it’s ready, mix well and transfer to the air fryer basket, placing a sheet of parchment paper at the bottom.

  • AIR FRYER COOKING: Always cook at 338°F (170°C) for 20 minutes, stirring halfway through

    TRADITIONAL OVEN: Cook in a hot oven at 392°F (200°C) for 30 minutes, then another 5 minutes under the grill so it will brown well and form a delicious crust

NOTES

We can use a red onion instead of a yellow one.

I used green olives, but we can use whichever we prefer.

To make everything more delicious, we can add grated Parmesan cheese along with the breadcrumbs.

It keeps for 2 days in the fridge, but I recommend consuming it immediately.
