Mini jam crumble tarts (or with preserves) are easy, quick single-portion sweets to prepare. I often make them as an alternative to the classic tart, and I must say everyone likes them!

Ingredients for the mini crumble tarts
- 3 1/4 cups type 00 flour
- 1/2 + 1 tbsp cup granulated sugar
- 1/2 + 1 tbsp cup butter
- 2 eggs
- 1 packet baking powder
- as needed lemon zest (grated)
- as needed vanilla (or vanillin)
- as needed jam (for filling)

- 1 Food processor Bimby tm31 – tm5 – tm6 – tm7
- 1 Bowl
- 1 Muffin pan
- 1 Rolling pin
- Spoons
Preparation of the mini crumble tarts
DOUGH WITHOUT BIMBY: In a large bowl, combine all the dough ingredients and start working it with your hands. The result should be a crumbly, sandy mixture, not compact.
DOUGH WITH BIMBY: Pour all the dough ingredients into the Thermomix (Bimby) bowl, close the lid and run at speed 4 for 30 seconds. You should obtain a crumbly mixture.
1 – Take half of the dough, compact it with your hands and then roll it out with a rolling pin. Now cut 12 discs and place them into the muffin tin cavities. Prick with the tines of a fork.
2 – Put one or two tablespoons of jam in the center of each tart and then cover them with the remaining crumbly dough.
BAKING: In a static oven at 338°F for 35-40 minutes. They should turn golden on the surface.
When they are cold, if you prefer, you can dust your sweets with a little powdered sugar.
NOTES
Instead of type 00 flour, you can use a type 1 flour.
They keep for a few days if stored under a glass dome.
