Ingredients for Pasta with Sausage and Cream

  • 11 oz pasta (your preferred type)
  • 1 cup heavy cream
  • 7 oz sausage
  • 3.5 oz dry white wine
  • 1.75 oz Pecorino Toscano (or Parmesan)
  • 2 tbsp extra virgin olive oil
  • 1 yellow onion
  • to taste black pepper
  • to taste salt

Preparation of Pasta with Sausage and Cream

  • In a large pan, brown the sausages, previously removed from the casing and crumbled by hand, together with the oil (you can skip the oil if you prefer). Meanwhile, finely chop the onion and add it to the pan. Mix well and let everything cook for at least 10 minutes over moderate heat until the onion is well softened and the sausage perfectly browned.

  • At this point, increase the heat and then deglaze with the white wine. Let the alcohol evaporate over high heat and, in the meantime, cook the pasta in plenty of salted boiling water.

  • When the alcohol from the wine has evaporated, pour the cream into the pan and immediately add the grated Pecorino. Continue to cook over low heat.

  • Drain the pasta al dente and transfer it to the pan with the sauce. Stir to flavor it well. Finish with a sprinkle of ground pepper. Serve the pasta adding a little more grated Pecorino to each plate (if you like) and a final grind of black pepper.

NOTES

It is recommended to consume immediately.

To make it lighter, you can replace the cream with sheep or cow ricotta.
