Red radicchio pesto with walnuts, you either love it or hate it… If you like the bitter and slightly spicy taste of radicchio, then you absolutely have to try this pesto. In fact, having a slightly bitter taste, not everyone likes it. Usually, it is “paired” with something flavorful, this way the bitterness is sweetened, and I really like it paired with speck or smoked scamorza cheese.

Ingredients for the red radicchio pesto with walnuts
- 10.5 oz radicchio (red)
- 2/3 cup grated Parmesan cheese
- 3 tbsp extra virgin olive oil
- 1 oz walnut kernels
- 1 clove red garlic
- 1 pinch salt

- 1 Food processor Bimby TM31 – TM5 – TM6
- 1 Blender
- 1 Knife
Preparation of the red radicchio pesto with walnuts
First, wash the radicchio, remove the inedible parts, cut it into pieces, and dry it well. Then proceed with the preparation of the pesto using a blender or the Bimby.
WITH BIMBY: Put the walnut kernels, Parmesan cheese, and garlic in the bowl, blend at speed 8 for 15 seconds. Bring down with the spatula and add the radicchio pieces, salt, and oil. Blend at speed 4 for 20 seconds. Open the lid and check, if necessary repeat the operation.
WITHOUT BIMBY: Put the Parmesan, garlic, and walnuts in the blender, blend until the mixture is sandy. Add the radicchio pieces, salt, and oil, blend at low speed and then gradually increase. We need to reduce the mixture as seen in the photo.
Notes
If you want a creamier consistency, you will need to add more oil.
It can be frozen.
It keeps in the fridge for a couple of days.
You can substitute walnuts with pine nuts or almonds.
