Rosti or Potato Pancakes, as I call them, are a potato-based dish, typically prepared in Austria, Switzerland, and South Tyrol. The last time I was in Switzerland, I had it with sautéed mushrooms, while my husband had it with eggs and bacon; we both liked it a lot, so I wanted to try replicating it at home. Instead of making it large like in Switzerland (it was about 8 – 9 inches in diameter), I made them smaller, using a round pastry cutter.

Potato Pancakes Ingredients
- 1.5 lbs potatoes (old – not new!)
- 1/4 cup all-purpose flour
- 1 pinch salt
- 1 pinch black pepper
- 1 pinch garlic powder
- to taste rosemary (chopped)
- as needed peanut oil

- 1 Skillet
- 1 Potato peeler
Preparation of Potato Pancakes
Peel the potatoes using a potato peeler or a knife. Wash them under water, dry them, and grate them using a grater with medium-small holes. Now place the potatoes in a bowl and add the flour, salt, pepper, garlic, and chopped rosemary.
Mix well with a spoon. The mixture will be a little soft, but not liquid. Now take a skillet, add some oil, not too much, nor too little. Heat it, and when the oil is hot, place a round pastry cutter and pour a spoonful of mixture in the center. Flatten it well using a spoon, ensuring it’s not too thick, about less than 1/4 inch.
Continue cooking a few pancakes at a time. Cook for about 3 – 5 minutes per side, until they are beautifully golden and crispy. Once cooked, drain them and place them on absorbent paper. They should be served hot.
They can also be cooked in a preheated oven at 450°F, static for 10 minutes, and then finished under the grill.
Notes
The potatoes used should be old, or you can use red potatoes.
Instead of flour, you can use cornstarch in the same quantity.
If you don’t have rosemary, you can use chives.
To add more flavor, you can add spices like curry or paprika to the grated potatoes.
Once cooked, I recommend consuming them immediately. They can be stored in the fridge for up to two days.
