Preparation of the super colorful Carnival bundt cake
WITHOUT BIMBY: In a bowl place the oil, the yogurt and the eggs (1) then using a hand mixer or a whisk, mix well (2). Add the flour, the sugar, the vanillin and the baking powder (3). Mix well, taking care not to form lumps (4). Pour the batter into a previously greased bundt pan.
WITH BIMBY: Put the sugar with the eggs, the oil and the yogurt in the mixing bowl and blend at speed 5 for 30 seconds. Then add the flour, the vanillin and the baking powder, mix at speed 4 for 1 minute. Pour the batter into a previously greased bundt pan.
BAKING: Bake in a preheated oven at 338°F (170°C), conventional (static), for 35 – 40 minutes. Do the toothpick test and if needed prolong the baking by a few minutes. After the time has passed, remove from the oven and let cool completely before unmolding.
Place the chocolate broken into pieces and the knob of butter in a small saucepan. Melt everything in a bain-marie, stirring until you get a smooth cream. (If you prefer, you can also use the microwave).
When the glaze is ready, pour it over the bundt cake trying to cover it completely. Finally add the colorful sprinkles.

TIPS and NOTES
Cake storage
The bundt cake keeps well at room temperature for 2–3 days, preferably covered with a cake dome or wrapped in cling film, so it stays soft and the glaze doesn’t dry out.
If you prefer, you can also store it in the refrigerator, especially if the kitchen is very warm: in this case it lasts up to 4–5 days. Before serving, let it come back to room temperature to bring out the chocolate flavor.
You can also freeze it without decorations (only the cake base), well wrapped, for about 1 month. When you need it, thaw at room temperature and then add fresh glaze and decorations.
