VEGETABLE MAYONNAISE

Vegetable mayonnaise, or fake mayonnaise, is egg-free and ideal for those who are lactose intolerant. This delicate and flavorful sauce is perfect for accompanying fish, meat, or vegetable dishes. It is prepared with a few simple ingredients and in very little time! Try it with fries, and I’m sure you won’t even realize you’re eating fake mayonnaise.

Here are some ideas for its use. Just replace classic mayonnaise with this one.

Ingredients for vegetable mayonnaise

  • 5.3 oz sunflower oil
  • 1/3 cup soy milk
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon mustard
  • Half teaspoon turmeric powder (optional)
  • 1 pinch salt

Preparation of fake mayonnaise

  • To start, pour the soy milk and sunflower oil into a tall glass (the plastic one from the immersion blender works great). Then add a pinch of salt, vinegar, turmeric, and mustard.

  • Immerse the blender to the base of the glass and start it, moving it from bottom to top: in just a few seconds, you’ll see the mayonnaise take shape before your eyes!

  • WITH BIMBY: Pour the soy beverage and apple cider vinegar into the mixing bowl, then mix for 10 seconds at speed 2.
    Emulsify for 3 minutes at speed 5, slowly pouring the sunflower oil onto the lid of the mixing bowl, letting it trickle down from the measuring cup. Gather everything at the bottom with a spatula. Finally, add the salt, turmeric, and mustard, then blend for 15 seconds at speed 3.

NOTES

Keeping the same proportions, you can use whole milk instead of soy milk and olive oil instead of seed oil. The flavor will change.

The turmeric can be omitted, as it mainly serves to give color to the fake mayonnaise.

For a perfect result, it’s essential to check the protein content in the soy milk: ideally, it’s 3.3 g per 100 ml of beverage. If the milk has a lower protein content, the mayonnaise may be too runny.

Store the vegan mayonnaise in the refrigerator, covered with plastic wrap, for up to 4-5 days.

You can also freeze the fake mayonnaise and thaw it in the refrigerator when needed.
