Couscous with prawns is a dish that tastes of the sea but brings us back to land thanks to the flavor of the zucchinis and the citrus notes of the lemon. To make this dish, I used pearl couscous which has slightly larger grains, you can easily find it in supermarkets, I bought it at Coop.

Ingredients

  • 1 cup Pearl Couscous
  • 2 zucchinis
  • 9 oz prawns
  • 1 lemon
  • 1 bunch chives
  • to taste extra virgin olive oil
  • to taste fine salt
  • 1 tbsp butter

Steps

Let’s start by putting a pot with plenty of salted water on the stove for cooking the couscous, it will take about 10 minutes from boiling.

  • In the meantime, dice the zucchinis, chop the chives and clean the prawns by removing the shells.

  • Now sauté the zucchinis in a pan with a drizzle of oil and a pinch of salt, when they are browned, add the prawns and the juice of a quarter of a lemon. Cook for just a couple of minutes, until the prawns turn color.

  • Next, add the couscous that has been drained and 100 ml (about 1/2 cup) of cooking water that has been set aside. Cook until the water is absorbed but without drying out completely. All that remains is to finish the couscous with a tablespoon of butter off the heat. Plate, garnish with chives, and enhance with a few drops of lemon juice. Our Couscous with prawns is ready to be enjoyed.
