Mini Donuts, a recipe that I was practically compelled to make by my son who loves them! I don’t enjoy frying, but if my son asks for something, I can’t say no, so I ventured into making these Fried Mini Donuts! I have to say, the result was liked not just by my son!

Ingredients
- 1 1/4 cups Manitoba flour
- 1 1/4 cups Type 00 flour
- 2/3 cup milk
- 2 3/4 tbsp butter
- 2 egg yolks
- 1 1/2 tbsp granulated sugar
- 1 pinch salt
- 1 tsp active dry yeast
- as needed peanut oil (for frying)
- 1 oz dark chocolate
- 1 3/4 tbsp butter
- 2 tsp milk
- 1/3 cup powdered sugar

Steps
This dough can be prepared either by hand or with a stand mixer. In either case, start by working the two flours in a bowl, then add the dry yeast and sugar.
Add the egg yolks one at a time, then gradually add the butter and milk, working either by hand or with the paddle attachment until all the ingredients are fully absorbed.
At this point, if using a stand mixer, switch to the dough hook. If working by hand, move to a floured surface, add the pinch of salt, and knead until the dough is smooth or perfectly elastic if using a mixer.
Place the dough in a bowl covered with plastic wrap in a warm, dry place to rise for about 2 hours, or until the dough has doubled in volume.
Transfer the dough to a lightly floured surface and roll out to about 1/2 inch thick using a rolling pin. Cut out the donuts using two cookie cutters, one larger for the ring and a smaller one for the hole. If you don’t have cookie cutters, you can use a glass and a piping nozzle.
Place the donuts on a baking tray lined with parchment paper and let them rise, covered with a cloth, for about an hour.
After the final rise, it’s time to fry the donuts. Heat a frying pan with plenty of oil, and when it’s hot, fry the donuts, turning them to brown on both sides. Drain them on paper towels to remove excess oil.
Now let’s make the chocolate glaze. Melt the butter in a small pot, then add the chopped chocolate. Remove from heat and mix until smooth, then add the powdered sugar, stirring until you have a lump-free glaze.
Dip the donuts into the glaze and let them dry before enjoying.
