Gratin Squid Rings with Cherry Tomatoes

Gratin squid rings, a recipe I tried this summer on my fishmonger’s recommendation. I must admit I always saw squid rings in the frozen section, but they never really appealed to me. However, this summer I found them in the fish section of the supermarket where I often shop, and the attendant was so enthusiastic in suggesting them that he convinced me to try them, and I must say he was right because prepared this way, I liked them a lot! So let’s see together how to prepare Gratin Squid Rings with Cherry Tomatoes.

Ingredients

  • 1.75 lbs squid (rings)
  • 1 cup cherry tomatoes
  • 1 clove garlic
  • as needed breadcrumbs
  • 1/2 lemon (zest)
  • as needed salt
  • 1 bunch parsley
  • as needed extra virgin olive oil
  • as needed black pepper

Steps

This recipe is prepared in very few steps.

  • Start by placing the squid rings and the halved cherry tomatoes in a bowl, add the zest of half a lemon.

  • Finely chop the parsley and garlic and add to the squid, drizzle with olive oil, and season with salt and pepper to taste.

  • Mix everything well, distributing the breadcrumbs evenly. Now place your squid on a baking tray lined with parchment paper and bake in a static oven at 375°F for about 25 minutes. Take your gratin squid rings out of the oven and serve immediately.
