Parsley potatoes, a simple but very good side dish that pairs perfectly with both meat and fish main dishes. Very easy to prepare, I often make them to accompany white meats or baked fish.   • 1.1 lbs potatoes (small or new potatoes)
  • to taste extra virgin olive oil
  • 1 bunch Parsley (generous)
  • to taste salt
  • 1 cup water

Steps

The first thing to do is to clean the potatoes well because for this recipe we will not be removing the skin.

  • Now we can cut the potatoes; if, like me, you choose small potatoes, cut them in half or into a maximum of 3 parts.

  • In a non-stick pan, pour a drizzle of extra virgin olive oil, add the potatoes and water, cover, and cook over high heat for about 15 minutes.

  • After this time, uncover and cook for another 5 minutes; the potatoes should be nicely golden. At this point, season with salt and add the chopped parsley. Our parsley potatoes are ready to be served.
