Parsley potatoes, a simple but very good side dish that pairs perfectly with both meat and fish main dishes. Very easy to prepare, I often make them to accompany white meats or baked fish. - 1.1 lbs potatoes (small or new potatoes)
- to taste extra virgin olive oil
- 1 bunch Parsley (generous)
- to taste salt
- 1 cup water

Steps
The first thing to do is to clean the potatoes well because for this recipe we will not be removing the skin.
Now we can cut the potatoes; if, like me, you choose small potatoes, cut them in half or into a maximum of 3 parts.
In a non-stick pan, pour a drizzle of extra virgin olive oil, add the potatoes and water, cover, and cook over high heat for about 15 minutes.
After this time, uncover and cook for another 5 minutes; the potatoes should be nicely golden. At this point, season with salt and add the chopped parsley. Our parsley potatoes are ready to be served.
