Ingredients

  • 3 3/4 cups all-purpose flour (medium strength (W 260 – 280))
  • 1 1/3 cups water
  • 2 tsp salt
  • 1 1/2 tbsps extra virgin olive oil
  • 1 tsp fresh brewer's yeast

Preparation

  • Let’s prepare the perfect sheet pan pizza dough together!
    Let’s start with the dough: pour all the flour and water into the mixer and let the ingredients work at low speed for a couple of minutes, just enough to mix everything well. At this point, cover the bowl and take a break: you can do other chores, like go out for a walk, work on the computer for those who, like me, often work remotely, or if you want to relax on the couch.
    You have about an hour and a half of freedom!
    After this time, restart the mixer (or stand mixer) and gradually increase the speed of the mixer. Add the yeast and continue kneading until you obtain a smooth and elastic dough. It’s time to add the salt, which should be added gradually. Finally, pour in the extra virgin olive oil in a thin stream and let the machine work for a few more minutes.
    The basic dough for sheet pan pizza is ready!
    Transfer it to a floured surface, do a fold, and let it rest in the refrigerator for at least 2 hours.
    Before baking the pizza:
    4 hours before baking, remove the dough from the fridge, divide it into dough balls, and let it rest at room temperature for a few hours. At this point, all that’s left is to roll out the base, top it as you like, and bake.
    The result? A homemade pizza, soft and tasty, that will leave everyone speechless!
