Ingredients for Farfalle with Zucchini and Salmon

  • 11.3 oz pasta
  • 2 zucchini (medium)
  • 7 oz smoked salmon
  • 3.5 oz spreadable cheese
  • 2 tablespoons extra virgin olive oil
  • 1.7 oz white wine
  • to taste salt
  • to taste pepper (ground)

Preparation of Farfalle with Zucchini and Salmon

Wash the zucchini, slice them thinly, and cook them in a large pan with extra virgin olive oil over medium heat for about 5-7 minutes, stirring occasionally, until they become soft.

Meanwhile, bring a pot of salted water to a boil and cook the farfalle according to the package instructions for al dente cooking.

Once the zucchini are cooked, lower the heat and add the smoked salmon, stirring gently. Also add the spreadable cheese, stirring until you get a smooth cream. If necessary, adjust salt and pepper.

Drain the farfalle and transfer them to the pan with the sauce. Mix well to combine all the ingredients. If the sauce is too thick, you can add a little pasta cooking water.
