Ingredients for golden and fried artichokes
- 4 artichokes
- 2 eggs
- 1 1/4 cups flour
- 1 lemon
- to taste black pepper
- to taste sunflower oil
Procedure
First, start with the cleaning of the artichokes
Wear gloves to prevent the artichokes from blackening your hands.
Remove the tougher outer leaves and cut off the top part with the thorns.
Peel the stem leaving about 1 inch attached to the heart of the artichoke.
Cut the artichokes in half, remove the inner beard and cut them into wedges.
Immerse the wedges in cold water acidulated with lemon juice to prevent them from darkening.Beat the eggs well with salt and pepper in a bowl and set aside.
In another container, add the flour. At this point, drain the artichokes and pat them with a cloth.
Flour the artichokes well and then pass them into the beaten eggs, immersing and turning them well, so that the egg covers the entire surface.Fry the artichokes a few at a time in plenty of oil brought to temperature (about 340 °F). Let them golden for about 3-4 minutes per side, so as to obtain a perfect golden color. When they have a nice golden color, drain them and place them on a plate with absorbent paper.

Storage and notes
The golden and fried artichokes can be stored in a container in the fridge for about 2 days.
Before serving, heat them in the microwave or even better in the traditional oven or air fryer for a few minutes.
If you want a lighter and tastier golden coating, you can add milk and Parmesan to the eggs.
