Sweet Angels with Hazelnut Cream born from the art of recycling have quickly become a true dessert in pizzerias, easily found on the menu. They represent the perfect example of how simplicity can verge on perfection.
They are nothing more than small pieces, strips of pizza dough that, once plunged into hot oil, become light and soft but with a crispy, golden crust. The final touch is the hazelnut cream that melts when in contact with the dough’s heat, creating a combination I would dare call “dangerous” for diets.

Ingredients
- 1.1 lbs pizza dough
- 4 1/4 cups sunflower oil
- as needed hazelnut spread
- as needed powdered sugar
- as needed remilled durum wheat semolina (or flour)

Preparation
This time I didn’t have time to make the pizza dough and used the ready-made dough purchased from a take-out pizzeria in my town. If you want to make your own pizza dough, you can read my recipe (clicking here), considering that the dough will need to rise for about 7 hours or until doubled in volume.
Dust the work surface with remilled semolina. Roll out the dough with your hands trying not to flatten it too much (this will help make the angels even softer and fluffier), and using a pastry cutter or a pizza wheel, cut strips no longer than 3 inches. If they turn out too long, cut them in half.
Pour the sunflower oil in a pan and bring it to a temperature of 347-356 °F. Fry a few angels at a time on both sides for about 4 minutes. Once cooked, place them on absorbent paper to remove excess cooking oil.
Place them on a serving tray, decorate with powdered sugar and with hazelnut cream to taste.
Storage and Variations
Sweet angels should be consumed immediately after preparation; if any are left over (but I seriously doubt it), you can store them for one day at room temperature and consume them after reheating them a bit in the microwave.
You can garnish them with your favorite hazelnut cream or the classic Nutella, or with pistachio cream, or chocolate glaze.
If you prefer a savory version, you can top them with tomato sauce and stracciatella, or accompany them with cheeses and cold cuts.
