I love bruschetta in any form, but these are truly out of this world: to accompany them, we’ll make a super simple zucchini cream, cherry tomatoes, and stracciatella. I just have to say that these bruschettas are so delicious that once you try them, you’ll always make them this way!
We’ll cook the bread directly in the air fryer, and as you’ll see, it only takes 5 minutes to have crispy and golden bruschetta. Alternatively, you can bake them in the oven, increasing the cooking time, or in a skillet. These bruschettas are simple yet amazing at the same time, with just a few simple ingredients.

Ingredients
- 8 slices bread
- to taste extra virgin olive oil
- 8.82 oz stracciatella
- 10.58 oz cherry tomatoes
- 2 zucchini
- 1.06 oz pine nuts
- 2 tablespoons grated Parmesan cheese
- 1 drizzle extra virgin olive oil
- to taste salt

Steps
Slice the bread thickly. Transfer it to the air fryer basket, add a drizzle of extra virgin olive oil, and cook at 392°F for 5 minutes. It’s not necessary to flip the bread halfway through cooking.
Meanwhile, prepare the zucchini cream. First, dice the zucchini and transfer them to a skillet with a drizzle of extra virgin olive oil and a clove of garlic. Cook for 10 minutes, stirring often without a lid; add a pinch of salt and continue cooking for another 5 minutes. Remove the garlic.
Transfer the zucchini to a mixer*, add the grated Parmesan cheese, pine nuts, a pinch of salt, a drizzle of extra virgin olive oil, and blend well.
*You can also use an immersion blender.
Prepare the bruschetta by spreading a generous layer of zucchini cream, adding cherry tomatoes halved, and stracciatella (or burrata). Finally, if you like, you can drizzle some extra virgin olive oil on top.

Tips for You
✔ You can serve the bruschetta hot or cold. Alternatively, you can prepare them a few hours in advance, put them in the fridge, and have them ready for dinner or lunch.
✔ Stracciatella can be replaced with burrata or, possibly, with stracchino.
✔ It is necessary to cook the bruschetta directly in the basket of the air fryer without trays or parchment paper: this allows them to cook thanks to the air that circulates 360 degrees from bottom to top, enabling ideal air frying. Trays or parchment paper would block the circulating air inside the air fryer.
✔ I recommend using the BBQ mesh, which you can insert directly into the non-stick basket of your air fryer: the mesh protects the non-stick coating of the basket (keeping it as new) and allows the food to cook evenly, letting the air circulate 360 degrees.
