Ingredients

  • 1 roll phyllo pastry
  • 5.3 oz tomato sauce
  • 8.8 oz melty cheese (or other of choice)

Steps

  • First, let’s prepare a simple sauce: in a bowl, pour the tomato sauce, a drizzle of EVO oil, and a pinch of salt, then mix. Meanwhile, also cut the cheese into thin slices.

  • In another bowl, create an emulsion of water and a drizzle of EVO oil, no precise measurements are needed.

  • Take a roll of phyllo pastry (there are about 8 sheets stacked). Open it and divide it into three parts, obtaining many long strips. Place 4 strips of phyllo one on top of the other, brushing between layers with the water and oil emulsion: this way they will stick well, creating a thicker single strip.

  • Spread one or two tablespoons of tomato sauce on the phyllo at the top, leaving about 2.5 inches above and 0.5-1 inch on the sides. Then add the thin slices of cheese. Brush the emulsion along the sides and fold them well inward (right and left); brush more emulsion on the folded edges. Finally, close from the top, folding the pastry several times to form a package. For the last step, brush again with the emulsion to seal and stick the pastry well.

  • Transfer the packages to the basket of the air fryer, or the perforated tray if using an oven-type air fryer. Brush the surface with more water and oil emulsion and cook at 392°F for 10 minutes, turning them halfway through cooking. Alternatively, you can cook them in a preheated oven at 410°F for 20 minutes.

    Once ready, serve them hot. Enjoy your meal!

Tips for You

✔ For this recipe, it is necessary to cook the packages directly in the air fryer basket without parchment paper: this way, they will cook thanks to the air that circulates 360 degrees from below to above, allowing an ideal air frying.
