Air Fryer Pizzaiola Bomboloni

Ingredients

  • 1 2/3 cups all-purpose flour
  • 1/2 cup water (room temperature)
  • 1 1/2 tsp instant yeast
  • 1 tbsp extra virgin olive oil (+ for brushing)
  • 1 tsp salt (leveled)
  • to taste fresh basil
  • 1.75 oz provola cheese (or other cheese)
  • 3.5 oz tomato passata
  • to taste extra virgin olive oil
  • to taste salt
  • to taste oregano

Steps

  • In a bowl, pour the all-purpose flour and add the instant yeast, the water at room temperature, the extra virgin olive oil, and the salt; start mixing with a spoon and then continue kneading with your hands in the bowl for a few minutes until you get a homogeneous dough.

  • Let it rest for a few minutes and in the meantime prepare a sauce by mixing the tomato passata with a drizzle of extra virgin olive oil, oregano, and a pinch of salt. Also, cut the cheese into cubes.

  • Take the dough and divide it into 4 parts, forming round buns. Roll them out with a rolling pin, being careful not to make them too thin, please. In the center, place a tablespoon of tomato sauce and one or two cheese cubes on top. Close by bringing all the edges toward the center, finally sealing the dough by pinching it with your fingers, so it remains sealed.

  • For cooking, you can choose between air frying, oven, or pan:

    AIR FRYER
    Place the bomboloni directly in the air fryer basket; brush them with a bit of extra virgin olive oil and cook at 356°F for about 12 minutes, turning them halfway through.

    CONVECTION OVEN
    Place the bomboloni on a baking sheet, add a drizzle of extra virgin olive oil on top, and bake in a preheated oven at 392°F for about 20/25 minutes.

    SKILLET
    For skillet cooking, heat a drizzle of extra virgin olive oil. Transfer the bomboloni to the skillet, lower the heat, and cook for about 5 minutes covered with a lid; flip the bomboloni and continue cooking for another 5 minutes.

    Serve with some fresh basil. Enjoy your meal!

Tips for You

✔ You can double the quantities as desired or halve them if you want to make just one focaccia.

✔ Different types of flour can be used if you don’t want to use all-purpose flour, such as: 00, 1, whole wheat, gluten-free flour mix.

✔ As you have seen, there is no need to use parchment paper to cook the focaccias in the air fryer, just place them directly in the perforated basket: this way, the air passes freely through the holes, and the cooking will be faster and more even. However, you must necessarily flip the focaccias halfway through to brown the underside well.

✔ I recommend using a BBQ mesh to insert directly into the non-stick basket of your air fryer: the mesh protects the non-stick coating of the basket (which will remain like new) and allows the food to cook evenly, allowing the air to pass 360 degrees. You can find it on Amazon by clicking here.
