Air Fryer Potato Rösti

Potato fritters, also known as “rösti“, are super easy to make and require only 3 ingredients. The name comes from Rösti (Swiss) and they are very similar to Hash Browns eaten in England, a staple in English Breakfasts. In England, I used to eat a lot of them because they are very tasty and disappear quickly. These fritters, or rösti, are crispy on the outside and very tasty. They are perfect as an appetizer to share with friends and family, or as a side dish during lunch or dinner.

Some fry them or cook them in a pan with oil, but in my version, we’ll make even lighter rösti: we’ll cook them in an air fryer. In this case, you only need a spray of oil, making them super light and at the same time delicious. Alternatively, you can bake them in a hot oven, increasing the temperature and time (find all the instructions below). We’ll also see how to make a quick and flavorful sauce. With these quantities, you can make 8-10 rösti.

Ingredients

  • 1.1 lbs potatoes
  • 3.5 oz potato starch
  • 1 teaspoon salt
  • to taste pepper
  • to taste extra virgin olive oil
  • 5.3 oz Greek yogurt
  • juice of half a lemon
  • to taste salt
  • to taste chives

  • Air fryer

Steps

  • Grate the potatoes using a coarse grater and squeeze them with a cloth: this way they’ll lose all their water. Make sure they are dry. Transfer them to a bowl and add the potato starch, salt, and a pinch of pepper. Mix well: the mixture should be dry.

    Cut squares of parchment paper, about 3×3 inches, and spread the potatoes on top. Compact them well with a spoon to form fritters. Transfer them to the air fryer basket directly with the parchment paper and add a spray of EVO oil. Cook at 375°F for 10 minutes or in a hot oven at 400°F for 20 minutes. You won’t need to turn them.

    Meanwhile, make a super easy sauce: in a bowl, mix the Greek yogurt with the lemon juice, salt, and chives (or other spices to taste).

    Serve the rösti hot or cold with the sauce or eat them as they are. Enjoy!

Tips for you

✔ For this recipe, it is essential to use parchment paper: because the mixture is liquid and without parchment paper, it would drip down. So the only way to cook the rösti or potato fritters is to use parchment paper. This way, they solidify and will be perfectly cooked.

✔ To make the rösti or potato fritters, you don’t need to use oil: with this cooking method, they will be perfect and even lighter.
