The Air Fryer Shrimp Burrito is an incredibly easy recipe, perfect for a light yet super delicious lunch, or for a tasty dinner ready in just a few minutes! They literally take 10 minutes to prepare: just cook the shrimp and mix them with a creamy and flavorful filling that will surprise you.
Only a few ingredients are needed, and the cooking can be done easily in the air fryer, but also in the oven or on the stove. All instructions are provided in the method below: choose your preferred method and bring to the table light, original, and delicious burritos!

Ingredients
- 9 oz shelled shrimp
- 2 tortillas (or rollable flatbreads)
- 1 avocado
- 2 tbsps Greek yogurt
- to taste smoked paprika
- to taste salt
- 2 tbsps Greek yogurt
- 1 tsp mustard
- 1 tsp ketchup
- to taste smoked paprika

Steps
First, take the shelled shrimp (frozen ones are fine too, as long as they are well-drained and defrosted). Season them with smoked paprika, a pinch of salt, and a splash of oil. Mix well, then cook them in the air fryer at 356°F for about 4-5 minutes: they should be well-cooked and have a nice pink color.
Alternatively, you can cook them in a preheated static oven at 392°F for about 8-10 minutes, or in a pan with a drizzle of oil, turning often, for 4-5 minutes until evenly golden.
Once ready, transfer the shrimp to a bowl. Add a ripe avocado cut into cubes, the Greek yogurt, and a pinch of salt. Mix everything well until you get a creamy and homogeneous mixture.
Now take a tortilla or a rollable flatbread and place half of the filling in the center. Fold the side edges towards the inside, then roll it up to form your burrito. Repeat the same process with the other half of the mixture, thus obtaining two burritos.
At this point, if you want to make them slightly golden and more compact, you can cook them in the air fryer at 392°F for 3 minutes, or in the oven at 392°F for 5-6 minutes. Alternatively, you can heat them in a non-stick pan for a couple of minutes on each side until lightly golden.
While the burritos finish cooking, we also prepare a light pink sauce to serve on the side or to add inside. In a small bowl, simply mix some Greek yogurt, a teaspoon of mustard, a teaspoon of ketchup, and smoked paprika. In a few seconds, you’ll obtain a creamy and light pink sauce, perfect for accompanying our burritos!

Tips for you
• If you prefer a stronger flavor, you can add a pinch of chili powder or a few drops of lime juice to the filling.
• Greek yogurt can be replaced with cream cheese or mayonnaise if you’re looking for a richer taste.
• You can enrich the burrito with crispy lettuce, thin slices of red onion, or diced cherry tomatoes for an even fresher version.
• For a dairy-free version, use a plant-based yogurt or omit it altogether.
• If you don’t have tortillas, you can also use thin rollable flatbreads.
• Burritos are also perfect cold: you can prepare them in advance and take them with you for a lunch away from home.
