  • Let’s prepare the batter.

    VERSION 1:

Pour the “air fry” batter mix by Le Farine Magiche into a bowl; add the water gradually and mix with a hand whisk. You will get a thick and smooth cream.

    VERSION 2:

In a bowl, pour the sifted flour, an egg, and a pinch of salt. Gradually add the very cold sparkling water (make sure), continuing to mix until you get a smooth and homogeneous batter. Let it rest for about half an hour covered with plastic wrap.

  • Dip the vegetables one at a time and transfer them directly into the basket of the air fryer lined with parchment paper. Cook at 356°F for 13 minutes; turn the vegetables and continue cooking for another 2 minutes. No oil should be added!

Or we can cook the battered vegetables in a preheated oven at 356°F for 20 minutes or fry them in plenty of vegetable oil until golden, turning them during cooking.

Tips for you

✔ As I said, parchment paper is necessary; alternatively, you can freeze the battered vegetables for about 3 hours and then cook them in the air fryer without using parchment paper this time and still without adding oil.

No need to add oil: remember!

✔ I provided two alternative batters, you can choose the one you prefer!

✔ I recommend using the BBQ mesh to be inserted directly into the non-stick basket of your air fryer: the mesh protects the non-stick coating of the basket (which will remain like new) and allows the food to cook evenly, letting the air circulate 360 degrees. You can find it on Amazon by clicking here.

✔ Alternatively, you can use perforated parchment paper, which allows the air to pass from bottom to top. You can find it on Amazon by clicking here: link.

✔ For this recipe, I used the PHILIPS 7000 Series XXL air fryer, 8.3 liters. It’s amazing, incredible capacity, you can choose the fan intensity (depending on the foods), and full control even from the App! You can find it by clicking here: link.
