Cheese-Filled Nuggets – in Air Fryer or Oven

If you’re a nuggets lover, these cheese-filled ones will drive you absolutely crazy! Soft and cheesy inside, with an irresistible crispness on the outside, these homemade nuggets are simply irresistible. Easy to prepare and definitely tastier than store-bought, once you’ve tried them, you won’t go back. The super crunchy coating of crushed cornflakes gives a unique touch, but if you don’t have them, breadcrumbs work just fine. And the best part? They are light because you can cook them in an air fryer or in the oven. To achieve the right crispness, you’ll find all the timing and temperature instructions at the end of the recipe. Enjoy!

Ingredients

  • 14 oz chicken breast
  • 2 eggs
  • 3 oz provola cheese (or other cheese)
  • as needed all-purpose flour (or rice flour)
  • as needed hot paprika
  • as needed salt
  • as needed unsweetened cornflakes (or breadcrumbs)
  • as needed extra virgin olive oil (spray)

Steps

  • Cut the chicken into chunks of similar size. Take each piece and make a horizontal cut in the center, creating a sort of pocket. Take the provola, cut it into cubes about 0.4 inches and insert them into each chicken pocket, trying to close well to prevent cheese from escaping during cooking (if it remains open there are no problems, it will still have its coating).

  • Prepare three plates: in the first, put the flour, add paprika and salt, mixing well. In the second plate, beat the eggs, while in the third, put the crushed cornflakes (or breadcrumbs, if you prefer) for the coating. Dip each chicken piece first in the flour, then in the beaten egg, and finally in the crushed cornflakes (or breadcrumbs), pressing lightly to adhere the coating well.

  • Spray a little oil on the nuggets and cook them in the air fryer (I recommend using perforated parchment paper) at 375°F for 15-20 minutes, turning them halfway through for even browning. Alternatively, you can bake them in a preheated oven at 400°F for 25-30 minutes.

    Serve them hot, perhaps accompanied by a sauce, like mayonnaise flavored with paprika (just add it and mix) for an extra touch of flavor!
