The chicken inside will be juicy and tender, and the outside will have perfect crispiness. The potatoes will look exactly like the ones you buy at the rotisserie. With the tips I explain in the recipe, you’ll get excellent chicken thighs or drumsticks with potatoes ready in half an hour. You’ll see how easy it is to get an excellent result at home with the air fryer. You can also replicate this recipe in a traditional oven, keeping in mind that the degrees and times will increase (even double).

  • Difficulty: Easy
  • Cost: Economic
  • Preparation time: 10 Minutes
  • Portions: 4
  • Cooking methods: Air frying
  • Cuisine: Italian

Ingredients

  • 4 chicken thighs (or drumsticks)
  • 1.1 lbs Yukon Gold potatoes
  • 1 drizzle extra virgin olive oil
  • to taste salt
  • to taste roast spices

Tools

  • Air Fryer

(air fryer with dual upper and lower heating elements, 6.4 liters)

Steps

  • • First, peel the potatoes and soak them in cold water for about half an hour. This way, you will remove the starch. This step is crucial to get crispy potatoes.

    • Dry the potatoes well and cut them into cubes. Season with a drizzle of oil and salt, and mix.

    • Prepare the chicken thighs or drumsticks by applying a mix of roast spices (or your preferred ones) on the skin. No need to add oil.

    • After preheating the air fryer to 375°F, place the thighs and potatoes directly in the perforated basket (without overlapping them) and cook at 375°F for about 30-40 minutes. Turn the chicken thighs once, while turning the potatoes more often.

    • And here is our chicken with potatoes ready, just like from the rotisserie.

Tips for You

✔ To achieve perfect chicken thighs with potatoes, like from the rotisserie, avoid adding oil to the chicken: the fat already present in the skin will ensure the chicken cooks perfectly without using additional oils or fats.

✔ This dish will also be lighter than the oven version because the fat contained in the skin will drip down through the basket holes.

✔ It is crucial to avoid using parchment paper or trays, as the fat needs to drip down.

✔ I recommend using a BBQ mesh directly in the nonstick basket of your air fryer: the mesh protects the basket’s nonstick coating (keeping it like new) and allows the food to cook evenly, letting air pass 360 degrees. You can find it on Amazon by clicking here.

✔ Alternatively, you can use perforated parchment paper, which allows air to circulate from below to above. You can find it on Amazon by clicking here: link.

✔ Always check the cooking: the chicken with potatoes will be ready after about 30-40 minutes. In my case, it cooked in 35 minutes, but it might need a few more or fewer minutes. It depends on both the fryer and the size of the meat and potatoes.

✔ You can also cook chicken with potatoes in the oven. In this case, you need to increase the temperature to at least 392°F/410°F, and the times will extend up to 1 hour.

✔ For this recipe, I used the COSORI Dual Blaze 6.4 L air fryer, with upper and lower heating elements. You can find it here: link.
