Creamy Salad with Zucchini, Chicken and Avocado Cream

The creamy salad with zucchini, chicken, and avocado cream is perfect for the summer season; you can eat it cold or at room temperature if you’ve just prepared it. We can cook the chicken and zucchini in an air fryer for quick cooking, especially without heating up the house, or in a pan or oven.

Ingredients

  • 10.5 oz chicken breast
  • 2 zucchini
  • 1 mozzarella
  • 0.6 cup Greek yogurt
  • 1 avocado
  • to taste cherry tomatoes
  • to taste salt
  • to taste extra virgin olive oil

Steps

  • First, we cut the zucchini in half and remove the ends. Then, we slice them thinly, about 1/8 to 1/4 inch thick. We take the chicken breast and cut it first into strips and then into cubes. To cook the zucchini together, optimizing space, just thread the slices on two long skewers. Add a spray of EVO oil on the zucchini and chicken and cook in the air fryer at 375°F for 15 minutes, turning them halfway through. Check the chicken and, if necessary, continue cooking after removing the zucchini. Alternatively, you can cook everything in the oven, always with EVO oil, at 400°F for about 25 minutes, or in a pan until golden brown.

  • Slice half an avocado and set the other half aside for the cream. Take the cherry tomatoes and cut them in half; finally, dice the mozzarella.

    Meanwhile, let’s prepare the super easy cream for our salad: in a blender, pour the Greek yogurt, the other half of the avocado cut into pieces, a drizzle of EVO oil and a pinch of salt; blend for a few minutes until smooth and creamy.

    Transfer the chicken and zucchini into a salad bowl and add the cherry tomatoes, mozzarella, avocado, and finally the cream: mix everything together and here’s a crazy delicious salad ready. Enjoy your meal!

Tips for you

✔ You can also use other vegetables or tofu instead of chicken to make this recipe vegetarian. For a completely vegan version, you can also substitute Greek yogurt with soy yogurt.

✔ You can store the creamy salad in the fridge, covered with a lid, for up to 2-3 days.
