The zucchini parmesan is a delicious and quick dish to prepare, perfect for those looking for a simple but tasty recipe. It is a perfect alternative to the classic eggplant parmesan with sauce. This version is even easier: no need to pre-cook the zucchinis, just a few ingredients: fresh zucchini, cooked ham, provolone, and parmesan cheese. The whole dish cooks in no time in the air fryer, achieving a crispy outside and a soft inside. If you prefer using the oven, you will find slightly higher temperature and time indications below. An ideal dish for a light lunch or dinner, but full of flavor!

Ingredients
- 2 zucchini
- 7 oz provolone
- 3 oz cooked ham
- to taste grated parmesan
- to taste salt
- to taste extra virgin olive oil

Very useful, 100 pieces suitable for air fryers up to 8 liters.
Steps
First, trim the ends of the zucchinis and slice them very thinly with a mandolin. If the zucchinis are very thin, there is no need to cook them beforehand. If they are thicker, it’s better to grill them first. Pat them dry from the vegetable water with absorbent paper.
Place a parchment paper tray in the basket of the air fryer. Make a layer of sliced zucchini and salt them to taste. Now, add the cooked ham (half a slice is enough), sliced provolone, and a little parmesan. Repeat for another 4 layers. In the last one, place only zucchini, a pinch of salt, parmesan, and a drizzle of oil on top.
Cook in the air fryer at 356°F for about 15-20 minutes. If you prefer the oven, assemble the parmesan in a baking dish and cook at 374°F for 30-35 minutes.
Once cooked, some water might come out of the zucchinis. You can decide whether to remove it, wait for it to be absorbed, or leave it as is. Enjoy!
Tips for you
✔ If the zucchinis are thin, you can put them directly without pre-cooking. If they are thicker, it’s better to grill them a bit first to avoid them being too hard.
✔ Every air fryer model is different, so if you see that the zucchinis are not well browned after 15-20 minutes, let them cook a little longer.
✔ Don’t worry if you see water coming out during cooking, it’s normal. You can choose to remove it, wait for it to absorb naturally, or leave it, depending on your taste!
✔ It is strongly recommended to use parchment paper; in this case, I recommend the parchment paper trays suitable for air fryers that you can find here: trays.
